Dr. Monika COTON (PhD-HDR) works as an Associate Professor at the ESIAB engineering school, University of Brest, and is a member of the Microbial Ecology and Biodiversity Laboratory (LUBEM UR3882) in Plouzané, France. Her research focuses on complex microbial communities (bacteria and fungi) in foods and their functional roles including secondary metabolite production such as mycotoxines. She has expertise in mycotoxin quantification from complex food matrices by LC-QTOF and has worked more specifically on mycotoxin migration for the last 4 years. She is the author of 75 articles and has been involved in many regional, national and EU projects.
